We feel that while the operating temperature (for whole gauge) is lower than boiling water, gauges like this have held up well for us in the short-term. If you are concerned about the longevity due to temperature or plan to immerse this gauge in boiling water to preheat, please think about purchasing a different gauge. We recommend using all stainless steel gauges as other materials such as brass can cause galvanic corrosion due to dissimilar metal contact over a long period of time.
